Moss muffins with mascarpone cream

Prepare delicious Easter muffins with us

You will need:

PATH:

125g fresh baby spinach

2 eggs

1 tsp lemon juice or lemon zest

90ml oil

150g plain flour

1/2 packet baking powder

FILLING:

250g mascarpone

85g powdered sugar

250ml (33%) whipping cream

PROCEDURE:

  1. To prepare the dough, wash the spinach and let it drain thoroughly. Then blend it with an immersion blender until smooth. In another bowl, beat the eggs and sugar until foamy. Add the lemon juice, oil, blended spinach and flour mixed with baking powder and mix. Spoon the dough into muffin cups. Place in a preheated oven and bake at 180 °C for approximately 20-30 minutes.
  2. To prepare the filling, beat the mascarpone with the powdered sugar in a bowl. Gradually add the whipping cream and beat until the filling begins to thicken.
  3. Decorate the finished cooled muffins with cream and decorate according to your imagination. In our case, we chose crushed pistachios and a chocolate bow tie. Enjoy!
